The termination of the Bluetooth connection between your mobile device and the M611 printer is intentional and by-design. 
The printer is capable of maintaining 2 active Bluetooth connections at the same time. 
Customers that intend to have multiple users, and multiple devices, connected to the M611 printer could potentially run into problems if a user forgot to manually disconnect their mobile device from the printer.
The decision was made to have the connection between the mobile device and the M611 printer terminated upon closing the Express Labels app to ensure that only the active users would be using one of the two available connections.
